gtasks does this already, but it would be amazing if you could implement a feature (optional if you deem necessary) to launch the app if you click on the widget.
Obviously if you click on a tick box it would complete that task, but clicking anywhere else should launch the app. What do you think?

When you create a new Tasks widget ensure that 'Show Header' is checked. You can then click on the widget's header to open the app. Clicking on any part of a task other than the checkbox should also open that specific task in the app.
