Surge: headless: Gnuplot output

For debugging Surge, outputting a Gnuplot datafile [1] would be useful.

Your ASCII art was a working PoC that we get something reasonable out :) I think this is like the next iteration. I see this possibly even more useful for debugging Surge than outputting audio.

Yeah I have some changes to headless also that are loading and playing everyvpatch on my Mac. Why don’t you do this then I will merge in my branch based on the structure you set up. Sound good?
