Signal seems to prefer pictures from the system's address book and thus overwrites profile pictures set in Signal accounts with the pictures provided by the address book contacts. Especially for the own profile (which is shown in the top left corner) this is confusing, as it suggests that a profile picture has been set whereas the Signal account does not have a profile picture set. Signal on iOS does behave as expected: it does not show the profile picture (even if there is one set in the system's address book). But Signal Desktop does show the local address book profile picture for the own contact.
