Overcooked crashes after start up. Music still plays in background. Using steamos. Was able to download as a whitelisted game. Using Nvidia Gt 1030 gpu

Re installed Steam Os. It has update d several times. I have not opted into
beta. Downloaded overcooked again as it shows to be a white listed game.
Game crashes after team logo. Here the photo of crach message. My specs are
as follows. Core i3 4170, gigabyte H81n mini itx motherboard, gigabyte
nvidia Gt 1030 2gb ddr5 GPU, dual channel 8 gb crucial ballistic (2*4gb)
sport 1600 mhz ram, Intel Bluetooth/wifi card, 500 gb Seagate firecuda
sshd, 1 the Seagate barracuda hd

If I can get this to work just by entering some comments in launch options that would be great. Any help would be greatly appreciated. We can play by streaming from my bedroom windows pc, but I would rather play from my Steamos pc in living room.
Set launch options. PROTON_USE_WINED3D11=1 %command%
Now game does work. If the issue in tracker ValveSoftware/SteamOS#652 can be fixed in an update to Steamos that would be fantastic.
managed to get game running using the set launch options @shaphanpena1 suggested..
however, game is running really slowly ... hardly able to navigate through the menu..

Using PROTON_USE_WINED3D11=1 %command%
and the Valve tested Proton 3.7-8, the game stuck at starting and a process named iscriptevaluator.exe legacycompat\evaluatorscript_448510.vdf
hangs and eats one of my CPU core. If I use Proton 3.16-6 beta, the game starts but controller input is not working at all
EDIT: Controller doesn't work because of uinput is not loaded, if its loaded then the game works flawlessly. Reporting this at https://github.com/ValveSoftware/steam-for-linux/issues/6076
I'm affected too, and workaround in https://github.com/ValveSoftware/Proton/issues/1737#issuecomment-430238176 seems to work here too.
I attach error logs:

Same as @NRG-R9T, the get works perfect when using wine without any tricks (just "Open with" wine64, I can use the gamepad too.
