Prestashop: [BOOM-6066] gift message and order message: error 500 with some chars

if I insert < or > in the gift message or order message during the checkout, when I click Continue to go to payment step I have a 500 error

I manage to reproduce the issue with the last version 1.7.4.1.

you can test it with with those characters : [<>{}]; in 1.7.5 and 1.7.6

Not working on 1.7.6.1 with this specific characters. An exception is throw instead of displaying an simple error to the customer.
