When you helm install KUBE-LEGO you get the following message:

We are tracking this and intend to update the doc. At current time cert-manager includes a note stating:
This project is not yet ready to be a component in a critical production stack
Based on this, and comparing the experience between the two, we went with kube-lego for the short term.
Update to cert-manager to follow shortly.

@neilpeterson : what is the simplest way to run ingress with kube-lego and with self generate certificate (not with Let's Encrypt integration) ?
@wlodekb - sorry, I do not know the answer to this. I would start with the NGINX Ingress documentation.
