I would expect the image to be uploaded to the Media Library and added to the gallery
Nothing. Nothing was added to the gallery. The image was not even uploaded in the background and added to the Media Library.
MacOS 10.13.6 (17G2307)
Google Chrome 79.0.3945.88
Recreated on a testing simple site:

I think this is https://github.com/godaddy-wordpress/coblocks/issues/1258, which should be fixed by https://github.com/godaddy-wordpress/coblocks/pull/1262. The fix is part of the latest release, https://github.com/godaddy-wordpress/coblocks/releases/tag/1.20.1, which we're currently preparing for WP.com -- we expect to land it tomorrow.

Aside, I think we need a CoBlocks label or team so people in charge of updating the plugin are notified
I see, thank you for confirming this. I noticed that I cannot reproduce this issue on a self-hosted site (with or without the Gutenberg plugin) using CoBlocks Version 1.20.1 (latest on the .org repo)
I gather that Version 1.20.1 already includes a patch for this and this is what we is pending to be added to add to WP.com, right?
Thanks again!

Correct - should land today for stickered "edge" sites, and in a couple of days to production.
For reference, the Call for Testing is at p7DVsv-84i-p2.
Another report in 8908297-hc. They also reported drag-and-drop uploading not working, which I'm hoping is covered by the same fix.
This looks to be fixed now on WordPress.com. Image upload to a Masonry CoBlock worked for me on Chrome 79.0.3945.13
