V-calendar: Formatting time and limiting hours

Hi there! Thanks for this awesome library.

I am using the "dateTime" mode with the 24hr option. The time picker label is displayed as: "Fr Nov 6 2020", I would like to restructure it to be "Fr 06.11.2020", is something like this possible currently?

Additionally I would like to limit the hours that are selectable, for example when thinking about opening hours it would be great to limit the hours that are selectable dynamically. Is something like this possible or on the roadmap?

I was also looking to limit the selectable hours for the timepicker. This would be an ideal solution if this would be implemented. Does anyone know if there is a quick fix(possibly hacky) to get this working?
