You can pass multiple ModelCheckpoint callbacks to the trainer callback list

Trainer(callbacks=[ModelCheckpoint(monitor="a"), ModelCheckpoint(monitor="b")])

however, this is not fully supported and the saved checkpoints will contain the state for only one of the ModelCheckpoints
