I have installed nmap-7.80.dmg and cannot copy output to clipboard. I am sure this worked in previous versions of OSX and nmap.
Donât stress out, most issues with nonfunctional clipboards and copy and paste on the Mac can be resolved with a series of fairly simple troubleshooting steps.
One way to force the Clipboard to relaunch itself in Mac OS via Activity Monitor:
1.) Quit out of the Mac app(s) where copy/paste are not working as expected.
2.) Open âActivity Monitorâ application, it is found within the /Applications/Utilities/ folder or you can hit Command+Spacebar and type Activity Monitor to launch it via Spotlight.
3.) In the Search box of Activity Monitor, type âpboardâ.
4.) Click on the âpboardâ process and then click the (X) in the Activity Monitor tool bar, then click on âForce Quitâ button.
5.) Exit Activity Monitor.
Try copying and pasting again.

I have followed your instructions but still have the problem. The paste board seems to work for every other app including apps that rely on XQuarts.
macOS 10.15.4 and nmap-7.80.dmg I can confirm that copy and paste doesn't work
paste doesn't work.
I have found that it works if you do NOT enter your password to run as root.
This also affects saving files. I have filed a new issue with this info #2130
