Nixpkgs: Document fetchFromGitHub & friends

Issue description

The nixpkgs fetchFromGitHub is not documented in the nixpkgs manual, despite being a pretty important function. The manual only contains indirect references to it in unrelated examples.

Friends of this function like fetchzip are also lacking documentation in the manual.

Fetching sources for building is probably one of the most important things you can do in Nix, so I feel like these functions should have a sizable chunk of the manual dedicated to them.

If only for this behavior that hit me twice in days https://github.com/NixOS/nixpkgs/issues/16645. I guess the behavior makes sense but can still be surprising.

While we're at it, I think it might make sense to move them out of all-packages.nix?
