It would be nice to receive notifications for when follow requests are approved and denied so you don't need to manually check.
Is there actually a need to manually check? Do you do something specific when someone has approved your request, or when they rejected it?
You probably want to know if someone has accepted your follow request. Otherwise it kinda floats in the air and you don't really know what.
i can understand a "pending follows" similar to incoming follow requests but for outgoing... or maybe showing these pending accounts in your "following" list somehow... but sending a notification feels excessive, since it isn't done for regular follows.
Regular follows are usually done within a few seconds and do not need human action from the other side which can take days.
The reasons I am uncomfortable with such a feature are basically that I can't think of actions you'd take upon receiving a reject notification except negative ones (e.g., sending a new follow request).
Similarly, I don't know what good listing pending outgoing follow requests would do. I can think it may prompt some people to send messages to request the follow request to be accepted, though.

Nothing happens. If we have no list which lists all pending follow requests you never know if it failed or not if you don't check the profile. If it succeeds you are notified.

This is again transparency vs trying to hide information in the intend to protect privacy. I could code this right now and get it working on public mastodon instances. Adding the feature would make it easier but right now nothing stops someone from doing it.

The same can be said about block notifications, and no way I'm allowing that in Mastodon, sorry.
I'm all hands for notification when your request gets approved, but not denied. This way you can go discover the private content of the author and interact with them, not silently finding their posts in the timeline and “o, they accepted me!”.
I would like a notification when my follow request is approved so that I can add their profile to lists. It's harder to organise lists if I have to keep remembering that such-and-such should go on list X but I can only do that after the request is approved, which I have no control of when it will happen.
