Lighthouse: .graphql vs .graphqls

Facebook does not define a clear standard on what the extension for GraphQL schema definition files officially is. Tooling is also divided upon this, some use only one, other tools use both.

At the moment, we use both in different parts of Lighthouse and the docs. We should choose one and stick with it.
