If you're using HTTP (I think this is your case here), blame your ISP for that. Your ISP can hijack your HTTP connections.
Consider using HTTPS to do _anything_ today, if possible.

If this is your opinion, then I can disprove you with Linux - You ARE using Ubuntu anyway, aren't you?
Linux is free and open-source, almost every server in production use it. There might be some security problems from time to time, but they'll be fixed immediately after being reported.
hosts at least in this project is also free, and while open-source is not applicable here, like @lrinQVQ said, you can verify its authority by performing an IP WHOIS query. That's something equivalent to open-source. PLEASE NOTE THAT THIS STATEMENT ONLY APPLIES TO THIS PROJECT: YOU DO HAVE THE RIGHT TO DOUBT OTHER hosts PROJECTS, BECAUSE SOME OF THEM LIKE GoHosts USES THEIR OWN 3RD-PARTY SERVER TO SERVE YOU, WHICH CAN REALLY CAUSE PRIVACY (AND EVEN SECURITY, IF THEIR SERVER IS LOCATED IN MAINLAND) PROBLEMS.
So, if you trust Ubuntu/Linux, why doubt this project? Just check the "code" if you think this "software" is not safe.

大家都应该相信 Linux 吧？Linux 是免费（虽然原文 free 应该解读为自由，但这里变通一下不影响理解）和开源的，如果你想质疑 Linux，你可以选择把 Linux 所有的源代码全都看一遍。记住，你有权怀疑某样事物，但与此同时你也有（为解开疑惑而对这个事物）展开调查的义务。
同样的，至少对于本项目的 hosts 而言，它跟 Linux 同样也是免费的，虽然这里不能套用开源这个概念，但如 @lrinQVQ 所说，你完全可以通过 IP WHOIS 或其他方式检查 IP 是否为官方 IP。因为你可以不受束缚地审查 hosts 的内容（就如审查 Linux 的代码一样），所以这一点就跟开源等同了。
如果你审查过后还有疑问，那么你有两种选择：要么以得体的方式向维护者提问，要么完全不要使用。
总之，我个人认为，这个 hosts 项目本身跟 Linux 一样安全，因为它跟 Linux 一样可以接受公开透明的审查。
但是请注意，我这句话并不是说所有的 hosts 项目都是安全的。有些 hosts 项目使用的不是官方的 IP，而是自己第三方服务器的 IP，所以使用这些 hosts 项目确实可能有隐私风险（甚至水表风险，如果服务器不巧还是中国大陆境内的话）。

You have doubts? Sure, either ask politely or just don't use it at all. Obviously your way of inquiring hurts all the maintainers here.
IMO, this project is as safe as Linux, because it can be openly reviewed.
