Flutter: [dashboard] run all benchmarks in --profile mode

We currently run in --no-checked --debug mode, which is not giving us real numbers.

Reassigning back to myself. I verified locally that this works now. I'll switch the dashboard to profile mode.

Note: this is currently blocked because flutter run --profile is not supported on Mac hosts.
