We're working on it. You can track the progress on this branch: https://github.com/dotnet-architecture/eShopOnContainers/tree/features/migration-dotnet3
As part of the migration, we're also starting to support gRPC and Envoy as API gateway. We're want to complete the documentation before we merge the changes - hence the delay.
