I am trying to follow these instructions to create a chroot without a desktop environment so that I can run apps within chromeOs without entering a different desktop environment: Guide
After creating the chroot I get the following when I launch it:

I have followed the guide up to the install of sublime type and nautilus. ALl looks good but I am unable to launch sublime type 馃憥

The 'precise' release is currently having a few problems since the addition of Android apps on Chrome OS so it might be best to avoid it for now.
Both of your 'trusty' releases look to be having some issues since they both report -
crouton: version unknown
release: unknown
architecture: unknown
Not good... ;(
If it were me, I would delete everything using the following:
cd /usr/local/chroots ; sudo delete-chroot * ; cd
Then start over with a brand new 'trusty' chroot using the following command -
sudo sh ~/Downloads/crouton -r trusty -t xiwi,keyboard,cli-extra,touch,chrome
I used the needed target that the guide suggested but omitted the targets 'core', 'x11' and 'extension' since they are prerequisites of the targets specified above.
Then just use sudo enter-chroot to get into your chroot and continue following the guide.
Once all the packages are installed and you've setup your custom environment you can use:
from inside your chroot: xiwi -t subl
-or-
from outside your chroot: sudo startxiwi -T subl

I am a little concerned by the fact that it says architecture: amd64 - I am using a Pixel which is an i7. Should I be worried about that?

I don't get any errors when entering the chroot now 馃槂 but when I try to launch sublime text I get teh same sort of issue but with a slightly different error message:

I think you're past the 'crouton' issues and have now moved on to something else.
Sorry but I don't use sublime so I don't know how to troubleshoot it.
I think I would follow the entire guide then see if you still have issues.

Aha - thanks to issue #2165 I got it working.
The command xiwi subl -w rather than xiwi -t subl did the trick.
