is this renaming the EpochNumber/Height to VersionNumber/Height?

yes that is my understanding. Change all references of Epoch to Version. cc @cwgoes

ok, I believe that the item document chainID version format needs to be a separate ADR tho. I'd move that out of the scope of this issue.
