Cats-effect: Add adopters section

Many libraries in the ecosystem and businesses in the industry rely on Cats Effect in one way or another. We should include a list of adopters (we already have one for libraries) that would acknowledge CE's presence and encourage more adoption. This list should be included in our README and possibly in the docs site as well.

We should start to collect a list of adopters in this thread, before we actually go out and create it. Please include a link to the adopter's website if possible!

Open questions:

1. Should we show company logos or just a name will do?

I prefer logos, personally, but it's hard to get a normalized set of logos. (by which I mean, size and background) Additionally, some companies that you and I know quite well have restrictions on how and where their logo can be presented and what is permitted to be around it. We certainly can't comply with everyone's restrictions all at the same time, so names will probably have to suffice.
