In the Suppression of an alert, is this a manual process or is it triggered every time the alert is called (Step 8 of Managing log alerts from the Azure Portal).
I attempted to set it up with the idea that checking the Suppress Alerts box would suppress after an alert is triggered, but then I saw the same alert being sent without waiting the time I allotted (60 min).

@AdamMirza When the suppress alerts is checked, it allows you to set an amount of time to wait before alerting again. AFAIK, it will suppress the alerts till the mentioned time.
Please make sure to specify an suppress alert value greater than frequency of alert to ensure notifications are stopped without overlap.

Alert suppression option will fire the first alert and subsequently suppress the further fires for the time specified. As stated by @SwathiDhanwada-MSFT in the earlier comment.
For maintenance mode or complete closure of notifications, suggest using action rules.
